Cheese, Chive & Salami Breakfast Muffins

These are a winner hot out of the oven and slathered in butter...yum!
Ingredients
100g butter
1 large or 2 small eggs
300g self raising flour (1.5 cups)
250g milk (1 cup)
1/2 cup of grated cheese - tasty, parmesan, whatever you have
1/2 teaspoon each of: garlic powder, onion powder, chilli or cayenne pepper
1 Tbsp fresh or dried chives
A few slices of salami or cooked bacon, diced.
Method
For Thermomix. Or just use a food processor/hand mixer.
1. Preheat oven to 180 degrees. Fill a muffin tray with paper baking cups*, spray with oil.
2. Melt butter. 1 min / 50 degrees / speed 4.
3. Add flour, milk, egg, garlic powder, onion powder, chilli powder. 10 seconds / speed 5.
4. Add grated cheese, chives, chopped salami. 5 seconds / speed 4.
5. Bake for 25 minutes.
6. Serve warm with butter.
*I use the brand If You Care who make non stick reusable parchment baking paper and muffin cases.
