Crab Rosti Stacks

House favourite! If you make a few extra rosti's they make the best breakfast the next day with some wilted spinach (fry it with fresh chilli & garlic) and a fried egg.
Rosti Mix:
3 large potatoes
2 eggs
2 Tbsp plain flour
½ tsp each of garlic & onion powder if you have them
Salt & pepper
Oil for frying in (I use grapeseed or rice bran oil)
Topping:
Rocket or salad mix
Crab meat or smoked salmon
Sour cream
Capers
Spanish Onion
Dill
Cracked pepper & olive oil to drizzle. Or truffle oil if you have it.
Making the rosti’s:
1. Peel and grate the potatoes
2. Mix potato in a large bowl with the eggs, flour, salt & pepper, garlic & onion powders
3. Heat a few tablespoons of oil in a heavy based frypan. Fry large spoonful’s of the rosti mix, flattening with a spatula once the mix is in the pan
4. When brown on both sides and cooked through drain on paper towel
Assembling the stacks:
1. Layer rosti, salad, crab/salmon twice to make a stack
2. Top with a big spoonful of sour cream
3. Artistically arrange (:-)) red onion, capers & dill on top and around the plate. (try Chilli & coriander for an Asian twist).
4. Finish with cracked black pepper and maybe a drizzle of olive oil or truffle oil around the plate so it looks extra fancy
