Vietnamese Style Salad

The perfect solution for leftover chicken the day after a roast.
Any mix of salad veg and meat works with this delicious dressing!
Ingredients
Shredded leftover chicken or cooked prawns, duck, beef...
Salad
Whatever is in your fridge! I like:
Shredded cabbage
Rocket
Grated carrot
Cucumber
Fresh mint, coriander & red chillies
Can add soaked vermicelli noodles as well
Dressing
2/3 cup oil ( I use grapeseed)
1/4 cup fresh lime juice
2 Tbsp fish sauce
2 Tbsp Sugar (I use rapadura)
2 fresh chopped red chillies
1/2 Tbsp tamari
Method
1. Assemble salad in a big bowl
2. Shake up the dressing in a jar and pour it over
3. Finish with fresh coriander, mint & chopped chillies on top
