Warm Asian Noodle Salad

This is delicious warm or cold and great for lunchboxes
Ingredients
Noodles (I've used Japanese Soba noodles)
Any combo of fresh veg you like, eg:
Grated carrot
Diced cucumber
Diced red capsicum
Shredded cabbage
Chives, Shallots, Basil, Coriander, Chilli
Sesame seeds or Seaweed sprinkle to serve
Meatballs
500g any minced meat (I've used chicken)
2 Tbsp tamari
1 tsp sesame oil
1 Tbsp fresh or 1 tsp dried chilli
1 crushed garlic clove
1 Tbsp finely grated ginger
1 Tbsp mirin
Dressing
1/4 cup grapeseed oil
2 Tbsp tamari
1 Tbsp sesame oil
1 Tbsp fresh or 1 tsp dried chilli
1 crushed garlic clove
1 tsp sugar
2 Tbsp lime juice
Method
1. Cook your noodles
2. Chop the veg
3. Mix all the meatball ingredients together well, roll into balls and pan fry in hot grapeseed oil
4. Mix all dressing ingredients in a jar and shake well
5. Combine noodles, veg, meatballs and dressing and mix well
6. Serve with fresh coriander & chilli sprinkled on top and some toasted sesame seeds or Japanese Seaweed Sprinkle.
